life's been busy, tis the season for northern family to visit, birthdays galore
and of course I have been sick for a month

anyhoozle-
menu for the next however many days---

Saturday-  grilled maple-glazed salmon - from The Lewis and Clark Cookbook and excellent cookbook and history book all in one
Sunday- chicken and broccoli, stoffer's frozen :) with garlic bread
Monday- million dollar spaghetti
Tuesday- leftovers
Wednesday- Greek salad and squash custard pie
Thursday- hamburgers and hot dogs with chips and leftover salad, soda and friends
Friday- homemade pizza

Apricot Coated Pork with Blue Cheese Sauce

I promise you that you will love this!
I mean you have to like pork and blue cheese, but if you do this is amazing! AMAZING!
Basically I took my stuffed pork tenderloin stuffing and layered it on top of pork chops.
Mixed the blue cheese sauce and viola! A yummy, gourmet easy to do meal!
You can find the real deal recipe here
but...
for the short cut version here's what I did:

~ 4-6 boneless pork chops, I pounded them so they were on the thin side
~ lay pork chops in an 8x8 or 9x9 pan for 4 chops or a larger pan for more chops
~ mix the stuffing mix and cover the pork chops evenly
~ mix my mom's famous teriyaki marinade and pour it over the whole thing
~ bake at 400 for 40-50 minutes

~ near end of baking time mix the blue cheese sauce
~ serve pork over rice
~ drizzle or drench with blue cheese sauce

and don't forget your salad or veggie

Week

In an attempt to organize my life I have once again...
pulled out my, 3 ring "Home Planner" binder.
While recently on a 3 hour plane ride with a sleeping 17 month old I came up with a weekly plan.

Monday: "Home Day" and meal prep and snack making day; if you've done life with me then you know I always plan a day of the week where I don't leave home. No appointments, no meetings, no friends houses- just home. For this season Home Day is Monday.

Tuesday: Adventure day, I'll try to head out for a local adventure with Aubry

Wednesday: meal planning/grocery list day/grocery shop:: OK gonna give this a try, Mondays and Fridays fail at doing this so why not try good 'ole hump day

Thursday: friend day, last summer I had lunch with a friend on Thursdays and we enjoyed it and plan on it when we can, so Thursdays will remain open for that reason

Friday: unsure, have a few ideas

Saturday: Farmer's Market, mostly for their yummy mini-fresh-made donuts :)

Sunday: relax

This leaves our my cleaning days and other day to day home operations but it gives me a good outline for what's going on each day.
I also plan to eat something new each week and a for sure everyone loves it meal.

Meals This Week

OK so when I don't meal plan, we eat out. 
I may cook once or twice and then we eat leftovers, or I resort to cereal and sandwiches.
So here's to this week... wish me luck!

Monday: World's Best Chicken - a Pinterest find and we'll see how the name holds up
Tuesday: Million Dollar Spaghetti - again a Pinterest find
Wednesday: Sweet Baby Ray's Crockpot Chicken
Thursday: Thai Food (hey I am gonna be gone and I need me some Thai to hold me over)
Friday: Pizza, I will be gone
Saturday: leftovers
Sunday: let's face it, Steve will eat out or at a friends

Also making smoothies packs this week 
as well as jars of smoothies and veggies drinks for Aubry's BooginHeads drinkable packs.

For a lunch option: Cucumber Salad
Breakfast/snack: applesauce bread

OK so already I am wondering if I'll have time for all of this along with packing myself, prepping family to live while I'm gone and let's not forget the upcoming event I have the Friday after I return.
Eeeek!
We'll see.
Now to get going to the grocery.

Blueberry Kale Smoothie


This was perfect to use in Aubry's Boogin'Head and good for me too!!
Gotta eat those greens

Blueberry Kale:
1 cup frozen blueberries
2 bananas
2 handfuls chopped kale
1 cup apple juice (could use water)
Optional: 1 T ground flax seed

Meals 4 Week

Here it is to help me stick to a menu and continue to eat down on my pantry

Sat: pizza
Sun: meat loaf
Mon: Quesadillas
Tues: fish
Wed: chicken alfredo
Thurs: chinese- b-day party
Fri: pecan chicken

I also want to make:
these muffins
Sweet potato fries
smoothies to have on hand

Now if I can just get the desire to make these things, it's gonna be a busy week so as much prepping as I can do will be helpful.

Another Week of meals

I just dislike cooking.
Simple.
If I've said it once, I've said it a thousand times, I really don't like to cook.
The meal planning, the deal getting (I spent $42 last week and saved $58), the shopping, the preparing, the clean-up and then there is the eating healthy thing, I mean come on can't we all live on chocolate. Cooking just doesn't excite me, in fact it has been the #1 most neglected thing in my life lately.
But... since we can't live on cereal I must make an attempt to cook something, anything.
So here goes...
my upcoming meals.

Thursday: Publix chicken
Friday: crock pot fajitas
Saturday: chicken salad 
Sunday: chicken soup
Monday: turkey meatloaf
Tuesday: sweet and sour meatballs
Wednesday: mini calzones

OK so there it is, I am attempting to NOT eat out this week.
As far as snacks and other meals... those drive me nuts too, I mean a diet of cereal and chocolate really fits every meal. Poor Aubry May and the rest of the eaters in our home. Don't get me wrong I do cook and we do eat healthy it's just that I don't do it with a joyful heart and I think food made in love tastes the best. I guess that's what I ask God for, a renewed heart for the cooking aspect of my stay at home mom job. I mean I use to enjoy it, one season of my life. I'm sure of it.
So breakfasts and lunches can look like this

b-fasts: oatmeal, cereal, eggs, apples, bananas, pancakes
lunches: hummus, pb&j, ham sandwich, fruit and veggie puree'
snacks: yogurt, graham crackers, fruit, sweet potato fries

Well hopefully this list will help me and I know my asking God is a for sure help.
So now... off to the grocery, at 5pm, with a baby, while I'm hungry :)
