Justin's Weekly Lunch Menu
It's hard to pack lunches fro a picky kid who would just assume not eat then eat something he doesn't feel like or just straight up doesn't like. Where some people, and some kids can make themselves eat something they don't feel like, he will not.
He has decided that he wants a schedule, a certain food on each day; so here goes nothing...

Monday's Menu
OK so no matter the planning it just seems like my dislike for cooking some days far outweighs the need to cook. See the trouble with loving cereal, if I had it my way we'd eat Multi-grain Cheerios at least once a week.
So taking a stab at a new routine this fall, I have a spreadsheet and everything (Katie will be proud).

Menu for the Next 6 days

for lunch I made these ham and cheese muffins from 5 Dinner in One Hour's Summer Lunch Ideas post - they were good, different, unsure if I'll make them again or not.

Another Step Back to the Blog
So I tried this 5 Dinners in One Hour free meal plan and it was great.
When I stumbled upon it via Pinterest I was thrilled because with graduation week, out-of-town guests and a grad party to throw, party side note: pictures to come, it was a Pinterest inspired party for sure!
Anyway, back to the meal plan...
The meals were yummy,
only tool an hour to put together
was cost effective.
With summer upon us I will be taking back over as the main cook so I'll be around here more often.
I like a blog when it helps keep me organized.
Hopefully our weekly menu will get posted before I sleep tonight.
Until then I recommend you go over to the 5 Dinner in ONE Hour website.

Pot Roast
I really like coming home from church and having a nice yummy dinner waiting for me.

Red Eggs
Every year for Greek Easter we dye a bunch of eggs a deep red.
This year i was given the task and decided to kind of figure it out on my own,
here's what I did:
Put eggs in a pan of 3 cups cold water and 3 Tbsp vinegar enough to cover the eggs.
Brought the water to a full boil over high heat.
Removed from heat and added 6 Tbsp of Scarlet Rit Dye
Covered and let sit for 15 minutes.
I removed the eggs and placed them on a paper plate, letting them cool for a few minutes.
Then I wiped each egg with olive oil and placed in an egg container for Greek Easter dinner.

Egg Salad
With all the eggs around from Easter I tried my hand at my own egg salad recipe.
Steve really likes 7-11's simple egg salad so we tried to reproduce that as best we could.
Of course we ended up with our own version.
8 hard boiled eggs
1/3 c Miracle Whip
< 1/3 c. Ken's Steak House Honey Mustard
1/2 tsp garlic powder
< 1/2 tsp onion powder

Chocolate Filled Croissants
So I discovered these on Pinterest and linked to this site for the recipe and the above picture.
I did however make a few changes.
First I used chocolate morsels instead of a Hershey bar, not that I don't love Hershey- cause I do!
And...
I filled some with chocolate AND peanut butter morsels-- yummy!
The cool thing was we can make 1 or 2 or 3 or 9!

A Season Ending
Yesterday I handed the grocery budget over to my daughter-in-law Sarah.
It has been 18 and a half years of cooking and meal planning for my family and now this season in my life has come to an end.
While some seasons end with a sad or heavy heart this one is welcomed with a joyful heart!
I like coming up with creative Family Night meals but the actual cooking part-- not so much my favorite.
Actually,
I could say I do not like cooking at all.
I've always said if I could I'd hire a cook.
I'll do laundry,
dishes,
clean floors and bathrooms;
but cooking...
not so much my favorite.
Baking Ilike enjoy, cooking :/
Now I will be responsible for 2 nights a week.
Wednesday and Sunday, so I'm not off the hook all together,
I can do anything I don't like for only 2 nights a week.
So no more Meal Plan Mondays--
hip, hip, horray!

Hoho Fruit Kabobs
These are too yummy to not post on here. Healthy and sweet all on one fun stick!
HOHO FRUIT KABOBS
Items Needed:
HOHO FRUIT KABOBS
Items Needed:
- 1 box (10 ounces) Hostess HoHos (10 HoHos)
- 2 medium ripe bananas
- 2 tablespoons lemon juice
- 2 cups fresh medium strawberries
- 1 cup fresh pineapple cubes
- 1 package (10 ounces) frozen strawberry halves in syrup, thawed
Directions: Cut each HoHo in half. Cut bananas into slices about ²-inch thick. Very gently and quickly, toss bananas in lemon juice, stirring to coat evenly; drain well.
Alternately thread pieces of HoHos, bananas, strawberries and pineapple cubes onto 8-inch skewers. (Leave one end of skewer to use as a handle.)
Place thawed strawberries in blender or food processor; blend until it forms a smooth sauce. Serve strawberry sauce with kabobs.
A jar of chocolate topping makes a great optional dipping sauce or for drizzling over the kabobs.
Makes 10 kabobs.
